1. Preheat oven to 375F.
2. In a bowl, combine flour, baking powder, baking soda and salt.
3. In another bowl, cream the applesauce and brown sugar. Mix in vanilla and egg white. Mix in raisins and crushed pineapple with juice.
4. Combine the wet and dry mixtures in one bowl.
5. Drop by tablespoons onto baking sheet, bake for about 8-10 minutes (edges will just start to brown.) Let rest for one minute to cool, then transfer to wire rack to cool.
Yield: 24-30 cookies
