Directions:
1. Preheat oven to 375F. Line cupcake pans with liners. Place a Vanilla Wafer in the bottom of each liner.
2. In a bowl, beat cream cheese, sugar, eggs, lemon juice and vanilla extract until light and fluffy.
3. Fill each liner about 2/3 full of cream cheese mixture.
4. Bake 15-20 minutes, or until set.
5. Top each with a tablespoonful of pie filling (and nuts if used.) Chill.
