Garbanzo Frito -- "Sauteed Chick Peas"
Ingredients:
- 1 30oz jar of tomato sauce (Ragu Chunky Gardenstyle recommended)
- 1 pound pre-cooked sausage (or lowfat turkey kielbasa), sliced
- 2 green peppers, cleaned, seeded and sliced
- 4 stalks of celery, sliced
- 6 small white onions (or 2 Vidalia or Bermuda onions), diced
- 1 4oz can mushroom stems and pieces, drained (optional)
- 1 16oz can garbanzos, drained
- 1 15oz can hot chili beans, NOT drained
- 1 15oz can black beans (optional)
- 1 6oz can unsalted tomato paste (optional)
- Garlic powder and paprika to taste
Directions:
1. In a BIG non-stick pot, saute the sausages and sliced peppers, celery, mushrooms if being used and onions until the sausage is a bit brown, the peppers and celery are soft, and the onions become translucent. (Remember, the sausage is already cooked, but you may want to brown it alone before adding the onions, celery, peppers and mushrooms.)
2. Dump in the tomato sauce and stir it in. If using tomato paste (this makes it thicker and sweeter) stir it in too. Add the beans, one can at a time, stirring thoroughly.
3. Heat through, and serve over rice, noodles, bread or just by itself.
