1. Preheat oven to 375F.
2. In a large bowl, beat butter and sugar until light and fluffy. Beat in egg, vanilla extract.
3. In another bowl, combine the flour, baking soda and salt. Gradually add this mixture to the first.
4. Stir in oats, chocolate chips (and nuts if desired.)
5. Drop by rounded teaspoon-fulls onto an ungreased cookie sheet. Bake for 9 to 11 minutes.
6. Cool for 1 minute on cookie sheet, then move to a wire rack to cool completely.
